500g Brazilian Spinach
1/3 cup Butter (unsalted)
3 -5 clovesGarlic
4 tbs All purpose flour
1/2 cup Milk
1/2 Cooking Cream
a pinch of Nutmeg Powder
1/2 cup Parmesan Cheese
Salt and Pepper to taste
Chilli flakes or cayenne (optional)
How to make creamed spinach
Trim and wash the spinach. (only the leaves)
Bring a large pot of salted water to boil.
Add the spinach in batches, cooking until just wilted. (about 2-3mins)
Drain in a colander, rinse, and then squeeze the water out with your hands.
Melt butter over medium heat in a large skillet.
Saute garlic and shallots onion until fragrant.
Add the flour, stir and cook 2 minutes.
Gradually add milk and cream, stirring (or whisk) until sauce is thickened.
Whisk in the cheese, nutmeg, and pepper.
Add spinach and cook until warmed through.
Add chilli flakes or cayenne (optional)
